Sadly the home grown ingredients are harder to transport but spices are readily available on the island. Extra snacks, picnic baskets, refreshments for the safari tours are some of the services extended beyond the three meals. This was a welcome treat due to long days we spent outside sightseeing. Local materials have been used throughout, with a mix of Kithul wood, stone and terrazzo flooring. The minimalist decor is signature Aman, with Balinese style furniture and large windows to maximise sun light. Fabrics in soft neutral tones add to the tranquility whilst music from the state of the art sound systems mingles with the sea breezes. Located in the coconut grove, just metres from the sea, is the Beach club; an open pavillion with a wooden deck for lounging and light informal dining. End the day with a spa treatment where the soporific effect of fresh oils and herbs will be felt. Interrupt the silence with a village walk through beach and jungle with chance sightings of monkeys, mouse deer and mongoose. The dining room is very atmospheric and privacy is promoted by a split level seating arrangement. The doors open onto the flood – lit grassy courtyard, and the relecting pools sparkle under the stars. The frangipani trees cast dancing shadows as they are ruffled by the sea breezes. The cuisine is Asian and Mediterranean with an empahasis on the local seafood. We could not experience the fine cuisine of the master chef as we visited the hotel pre-opening, however the menu looks mouth watering. View some of the choices: Breakfast: delicious fresh juices, yoghurts, cereals, eggs, pancakes or a huge English style platter. Lunch and Dinner: spiced chicken salad, slow roasted duck with coconut and ginger, stir fried beef, many fish dishes including king prawns, yellow fin tuna and locally caught lobster. Deserts sound divine: pineapple crumble with sorbet, tropical fruit salad with toasted coconut, lemon, vanilla and yoghurt panacotta with passion fruit coulis. Guests tend to dine and retire early after days in the sun and the adjacent lounge bar has a welcoming ambience for a night cap. Panoramic views of the resort accompany the best conversation and the many board games keep some guests ticking way beyond 11pm !! Pre dinner cocktails at sun down and light lunches are also served in the bar. The terrace beside the pool provides another popular venue for alfresco diners. Simple lunches, king coconut and exotic fruit are served throughout the day. In the evening guests can dine on ante pasta and home-style dishes whilst star-gazing on the daybeds and bolsters. Beach lovers may prefer the Beach club for lunch time snacks. A light and simple menu of Asian salads and mediterraanean classics, using local seafood cooked over a coconut BBQ. Amangalla 10 Church Street, Galle The fortified town of Galle has always been a significant trading port occupied by many nationalities. The Fort remains a ‘living’ monument, protected by UNESCO as a World Heritage Site since 1988. Amangalle is an amalgamation of buildings dating back over 400 years, used successively by the Dutch, then as a billet for British soldiers, then to create the new Oriental Hotel which traded for 140 years during which time it was the home of generations of the Nesterboer family. Purchased by Aman in 2002 who have restored many of the original features eg. the colonial pillared frontage, the Victorian parquet flooring, the Dutch great hall with its Burmese teak floor, grand piano and spiral teak staircase. The traditionally clad, though rather morose, doormen are very quick to help with bags or offer an umbrella to Fort shoppers. Galle Fort is a rich, cosmopolitan, largely Muslim community of small hotels, restaurants, shops, government offices and all the minutiae of daily living. The narrow streets are bustling with bicycles, people shopping and collecting children from school. Amangalle provides a perfect base for exploring the rich local history, whilst the scenic countryside of the south west is within easy reach. After or between your sightseeing there is ample opportunity to relax in their famous library and reading terrace. Things to do & local tips Walking the Fort the most enjoyable way to cover all the nooks and crannies- almost too numerous to list : include the old Dutch church, spice warehouses, the lighthouse, the ramparts at sunset. Stroll at dusk and watch the locals fly kites, play cricket and indulge in ice creams. Galle Town sprawling and rather dirty but colourful displays of fruit in the bustling market. Rhummassala a magical headland on the southern side of the bay. Research the Ramayana legend and enjoy the many rare and beautiful plants and 60 species of bird. Village life rural Sri lanka is minutes away. Beyond the noisy Galle Road are rice paddies and coconut estates where time seems to stand still, and tempting antique shops and puppet museums which often require the purchase of an extra suitcase or shipment home. Be careful, as tropical wood may develop splits in drier, centrally heated houses. Temple Buddhism is very visible in the gentle demeanor of the people and the proliferation of temples.
